Pinot Noir is globally renowned for its finesse, elegance, and its ability to precisely express the terroir in which it is grown. Although it is a delicate and demanding grape variety, it has found a welcoming home in Quebec when the conditions are just right and vineyard management is meticulous.
At Vignoble Montvinéa, Pinot Noir holds a special place: we tend 5,376 vines with the goal of producing a beautifully balanced wine that remains true to our Mont-Saint-Hilaire terroir.

Pinot Noir: A Demanding Grape by Nature

Often described as a temperamental grape, Pinot Noir requires:

  • a cool to moderate climate
  • well-drained soils
  • and precise vineyard management

These conditions are essential to avoid over-ripeness or, conversely, a lack of aromatic concentration. In Quebec, this challenge is very real, but when managed with care, it also yields wines of incredible freshness and outstanding finesse.

Pinot Noir Winemaking in Quebec

Pinot Noir winemaking is first and foremost a study in gentleness. At Montvinéa, our goal is to preserve the grape’s unique aromatic identity and the signature of our terroir.

After the harvest, the grapes are fermented on their skins, a key step for:

  • extracting color
  • structuring tannins
  • and developing aromas

Close attention is paid to fermentation temperatures and duration to safeguard the red fruit aromas characteristic of Pinot Noir, such as cherry and raspberry.

Subsequent aging refines its texture and coaxes out subtle spiced notes, such as nutmeg and pepper, without masking the grape’s natural freshness.

Aromatic Profile and Structure

The Montvinéa Pinot Noir stands out with:

  • On the nose: cherry, raspberry, strawberry, floral notes, and sweet spices
  • On the palate: fine, silky tannins and an elegant texture
  • Finish: long, fresh, and well-balanced

This is a light and refined wine where finesse triumphs over power, staying true to the spirit of cool-climate Pinot Noir.

Food and Pinot Noir Pairings

Thanks to its delicate structure and supple tannins, Pinot Noir is incredibly food-friendly:

  • a fine charcuterie board
  • poultry with herbes de Provence
  • savory tarts, such as a caramelized onion tart

These pairings showcase the wine’s freshness without overwhelming its delicate aromatics.
